Great for all your blue & white tailgating!
Yield: 6 servings of 1 cup
2 cups of blue taters, cut halved lengthwise
2 cups of fingerling taters, cut halved lengthwise
1/4 cup of finely chopped red onion
2 tablespoons of fresh chopped parsley
1 tablespoon of fresh dill
1 tablespoon of fresh chopped chives
3 hard-cooked eggs, finely chopped
1/4 cup of red wine vinegar
2 tablespoons of olive oil
2 teaspoons of dijon mustard
2 cloves of garlic, finely chopped
salt & pepper to taste
Keep your the blue taters separate from the fingerlings. The blue taters will get angry and make everyone blue! Seriously, don’t cook them together. Place the fingerlings in a saucepan, cover with water & boil until tender. In another saucepan, do the same with the blue taters. Ok, now your taters can play together- but cautiously mix the them with the onions, parsley, dill, chives, eggs & gently toss. For the dressing- combine the red wine vinegar & remaining ingredients. Pour over the previous mixture of taters. Serve chilled.
